Peppermint Patties – Recipe
As I’ve confessed several times, I like to eat treats even though I don’t eat any sugar. Using simple ingredients that are staples in my kitchen, I whipped up these lovely Peppermint Patties. To my palate, peppermint hits a sweet spot without being actually sweet. A hint of peppermint makes un-sweet chocolate taste more chocolaty.
Peppermint Patties Recipe:
Ingredients for shells:
1/4 cup coconut oil, melted
1/4 cup coconut butter, softened
1/2 cup unsweetened cocoa
dash of salt
2 drops Young Living Peppermint Vitality oil
Mix coconut oil and coconut butter well, then blend in salt and cocoa until thoroughly combined. Add Peppermint Vitality, then mix well.
Ingredients for filling:
3 Tablespoons coconut butter, softened
1 Tablespoon coconut oil, melted
10 drops Young Living Peppermint Vitality oil
Mix coconut oil and coconut butter well, then blend in Peppermint Vitality.
Place 12 mini size parchment cups in a mini muffin pan. Put 1 teaspoon of shell mixture in each cup, then chill to set. Once bottom shell sets, divide filling between the 12 cups, about 1 teaspoon per cup. Again, chill to set. Finally, spoon remaining shell mixture over the filling in each cup, a little more than 1 teaspoon per cup. Chill to set.
I store these in the refrigerator, then set them out for a few minutes before eating. They are fresh and minty, but not sweet. Here’s another look:
