Grain-free Snack is Easy to Make!
This snack mix combines my 3 favorite nuts – almonds, pecans, and walnuts – with pumpkin seeds and sunflower seeds. The mix is coated with a blend of egg and green banana and flavored with cinnamon and vanilla. Once it’s baked, I portion it into snack bags that will accompany me to work, just right to get me through my busy mornings.
The book suggests eating banola as a cereal with unsweetened almond mild. I must confess that I have not tried it as cereal.
I make a few tweaks to the recipe to make it work for me. The recipe calls for 2 bananas, but I use just one. The first time I tried the recipe I used 2 bananas and the resulting mix was too “wet” for me. I ended up doubling the amount of nuts and seeds in that batch to get a mix that seemed nicely coated but not too wet. Now I use only one banana. I also use a half cup each of sunflower seeds and pumpkin seeds instead of a half cup total. Finally, I leave my pecan halves and walnut pieces as is, with no additional chopping.
