Crustless Quiche – 21DSD

Back in the day, I used to make quiche every week. When I saw this recipe and read the ingredients, I knew it wouldn’t be much like the quiche I remembered, with a butter crust, lots of cheese and ham, and a creamy custard filling. Still, I decided to give the recipe a try.
Crustless Quiche Recipe Modification:
I began by making the carmelized onions, recipe found on page 200 of the same book. It took a long time to get my onions looking nice and brown. I’m not sure my onions were “carmelized” but they looked good. While the onions were cooking I also crisped the bacon called for in the quiche recipe. Given the amount of cream usually used in a quiche, it seemed strange that this recipe called for none. When I whisked the eggs, I made sure to add in 1/2 cup of heavy cream, a minimal amount.
I put all the ingredients together, then popped the pan in the oven and hoped for the best. After the allotted bake time I took the quiche out of the oven and was surprised by how good it looked. The sides were a little browned and pulled away from the pan just as the recipe promised. It was easy to cut and serve. I served the quiche on warmed plates with raw carrot sticks. This recipe serves 4, so my husband and I have leftovers for one meal.
Making this quiche made me curious about how I could make one more similar to those I used to make. This idea is in development. Stay tuned. For now, my husband is wondering if he can have leftover quiche with Pork Green Chili on it. Oh my goodness! Bacon and pork in the same meal!
