Almond Butter Cups, 21DSD
Sometimes you’ve just got to have a piece of candy. That’s what I thought before I started eating sugar and gluten free. I still want a treat from time to time. These Almond Butter Cups aren’t really candy because they have no sugar. They stand in for candy, and are a great after school or after dinner treat. They’re chocolaty and full of healthy fats to satisfy the appetite.
I found this recipe in the 21 Day Sugar Detox book by Diane Sanfilippo on page 206. It makes 12 candy cups. I eat two of them as a serving. Other tasty treats from the 21DSD books include Banana Pecan Macaroons and Sunbutter Truffles.
Other nut butters could be substituted for almond.
Store them in the fridge, then allow them to warm slightly to improve flavor.
