Can I admit that sometimes I like to eat pizza? There are a couple of problems with regular pizza, and in fact I haven’t eaten any since I started 21DSD in January, 2016. First there’s the crust. Even gluten-free pizza crusts are made with grain flours, not allowed on the 21DSD food plan. Also, some pizza sauces contain sugar as an ingredient. Even commercial Italian sausage can have sugar in it.
The first 21DSD pizza recipe I saw was called “meatza”. Still haven’t tried that recipe. In the cookbook, though, this recipe for Pizza Frittata was appealing to both my husband and me.
This recipe is loaded with green peppers, mushrooms, and green onions, pretty much what I would want on a regular pizza. And sausage….. well, not really sausage. Instead it calls for ground pork and seasonings that make it taste like sausage.
There are a few tweaks I make so this recipe works for me. First, I use a whole pound of ground pork instead of the 1/2 the recipe calls for. A serving is 1/6 of the frittata, so that’s only 1/6 of a pound of pork in each serving, not excessive at all. Next, I use 8 ounces of tomato sauce instead of the 4 ounces called for. Both of these adjustments are made to make the best use of the packaging sizes available to me at the grocery store.
Another little adjustment I make is that instead of mixing up a batch of “Italian Sausage Spice Blend” from page 222 of the book and using 1 T of it, I just measure out what I need of each of the spices, just enough for 1 batch. I use 1 t whole fennel seed, 1 t garlic powder, 1 t onion powder, 1 t sage, 1/2 t parsley, and 1/4 t white pepper. The fennel gets crushed in my mortar and added with the other spices. I also reduce the salt used in each step of this recipe. Finally, I add a sprinkle of shredded Parmesan to the top of the frittata.
I’ve made this recipe several times now and my husband asks for this in our meal rotation. “Weekly”, he says. Like many other 21DSD recipes, it serves 6 so in our small family we have enough leftovers for 2 additional meals.
