21DSD Beef & Bacon Cottage Pie

In the cookbook, this recipe is shown baked in a large round baking dish, like a pie. I always make mine in these sweet little 2 cup baking (food storage) dishes from Anchor Hocking. They come with a plastic lid so I can put the extras in the freezer for future meals. Mostly I use the little baking dishes because PORTION CONTROL, that’s why. Otherwise the amount I dished out of the big pie would grow until I was eating way too much in one meal.
It always takes me a while to make these, so I start early. The recipe says prep time is 15 minutes and cook time is 50 minutes. Somehow it takes me longer than that to prepare a butternut squash for the topping, chop the veggies, and cook up all that amazing bacon and beef.
There is one little tweak I make to this recipe so it works better for me. Instead of mixing up the Smoky Spice Blend on page 222 of the book and using a portion of that, I simply add 1 t Chipotle powder, 1 t Onion Powder, ¼ t Black Pepper, and ½ t sea salt. My husband and I don’t care for Cinnamon with our meat so I leave that out. (OK, there was that one time when Rose’s Lariat had an amazing Cinnamon sauce on their enchiladas.)
Beef & BACON Pies:
Funny…. the final line in the recipe says, “Garnish with extra bacon.” Meaning leftover bacon? Excess bacon? She must mean “additional bacon.” Yes, now that makes sense. I will surely give it a try next time I make these dinner delights.
