Banana Pecan Macaroons! So Easy to Make!
Shredded unsweetened coconut, pecans, and green-tipped bananas, along with some spices and a little cocoa. These delightful little treats sound simple, and they really were easy to make!
I sometimes entertain in my home and like to provide my guests with food of one kind or another. Food is expected at a gathering, right? The problem I run into is that I am the only sugar free person I know. I know that most of the time I foods I snack on are not what others snack on. This leaves me with a dilemma when I’m feeding guests. I usually end up baking brownies or cookies so I can offer guests the foods they expect.
When I tasted my first 21DSD macaroon, I was amazed by their cookie-like texture. This is something I would be willing to offer to guests!
The macaroons are tender and nicely combine the flavors of banana, coconut, and chocolate. I’m always on the lookout for things I can make and eat that diversify my daily diet without leading me away from my food plan. My husband, who is diet-conscious but not sugar-free, liked these too, so I’ll be making them again.
