Apple Cinnamon Donuts: Gluten-free treats!
These donuts are sugar and gluten free and deliciously un-sweet! The recipe was easy to put together, using ingredients that I always have on hand, such as a Granny Smith apple, full-fat coconut milk, coconut oil, and coconut and almond flours. I used the recipe as written, with no modifications this time.
The aroma of baking donuts was heavenly! My delectable donuts stuck to the donut pan a little, and the bottoms were a little wet. The donuts were browned nicely on the bottoms, so I think the extra moisture was being released from the apples. I did pre-cook the diced apples as per directions, but maybe it would help to cook them a bit longer to reduce some of the moisture? I may try that next time, or I may bake them as muffins. Perhaps I’ll try making both adjustments.
My husband and I just enjoyed one donut each with a cup of green tea, and we were just as happy as we would have been if these donuts had come out perfect!
