Apple Chai Spice Scones
Apple Chai Spice Scones recipe found in the 21 Day Sugar Detox Cookbook by Diane Sanfilippo, pg. 180. The first time I made this recipe, I used freshly ground Cardamom (from my un-sweet Chai explorations, a topic for later). The flavor of Cardamom was overpowering in that batch. The next time I made them, I used ground Cardamom from the spice aisle in the grocery store and the results were more what I expected.
I use only Granny Smith apples for eating and for baking. Peeling and dicing them takes me longer than I’d like, but once that is done these scones come together pretty quickly. They have no sugar or sweeteners, so don’t expect sweet. Because I not eaten sugar in over a year, they taste just right to me!
The frosting is made of coconut butter, butter, vanilla, and cinnamon and again is not sweet.
When I sit down with a scone and a cup of hot tea, I am truly treating myself right!
